Tasty Tuesday: Chile Relleno Beef Casserole

Tasty Tuesday has been at a standstill as I haven’t cooked anything too terribly out of the ordinary. I have been gearing up for Thanksgiving and all my fudge recipes that are already typed out and ready for posting in December. YAY!! Anywho.
So yesterday, I had ground beef and green chile out of the freezer. If you know me, I am from New Mexico, and my mom sends me Hatch, NM green chile, because in Massachusetts, we cannot get them.  So… I knew I had to make something for dinner. So I already make chile relleno casserole. I just added grownd beef. So here is the recipe! It is yummy! Enjoy!



Chile Rellenos Casserole

Ingredients
2-4 servings 1 lb. ground beef 1/4 onion (chopped) 1 10 oz. can whole green chilies 1 1/2 cups cheddar cheese 2 eggs 3/4 cups milk 1/8 cup flour 1 tsp cumin 1/2 tsp salt 1/2 tsp pepper

Directions

Preheat oven to 375F. Cook hamburger meat and onion. Drain, then add cumin, salt, and pepper. Line the bottom of your pan with whole green chiles (chop extra green chiles for later). Layer meat over green chiles. Top with cheese and chopped green chiles. Whisk together eggs and milk, then add flour and mix well. Pour this mixture over dish. Bake for 35 to 40 minutes. Serve right away while everything is hot and cheese is melted. Yum

Tasty Tuesday: No Peek Beef Tips

If you are like me, you want to peek at the food as it is cooking, because it is so yummy and smells heavenly.  This is one recipe.. I DO NOT PEEK.. As hard as it is. I have to keep myself and everything else in my house.  I also turn this into stroganoff.  By adding sour cream at the end. That is totally optional. SO here it is.




Ingredients: 

2lbs of beef tips,  stew meat, or chuck roast
1 can cream of mushroom
1 packet onion soup
1 cup of water



Directions:
1.     Put meat in 9x13 casserole dish 


2.     Mix all other ingredients together in separate bowl

3.     Pour over meat. Cover with foil on top. 


4.     Place in oven at 300 degrees for 3 hours…… NO PEEKING!


You can serve over mashed potatoes, egg noodles, or rice.
I put it over egg noodles and mix sour cream towards the end for a stroganoff feel.
Excuse the paper plate, i didn't want to do more than I had to in dishes tonight.
